The oven door on our Viking had settled far enough out of true that you could feel heat spilling past the top edge, and anything roasted longer than an hour came out cooked on one side. Tired hinge springs, apparently, not the seal I had been blaming. He replaced them, reset the door, then had me crouch down and sight along the gap myself before and after. Our bungalow off Olde Town is not exactly square either, so I appreciated being shown rather than told.

Continuous clicking that never lights, a burner that lights then dies, orange or lazy flames, and dead zones after a spill. On the Front Range, thin air and factory orifice sizing both shape how a flame should look, so we tune to combustion, not to a picture from sea level.
